The Kwame Nkrumah University of Science and Technology (KNUST) in Kumasi has organized its annual Food Festival aimed at celebrating diverse local dishes, cultural heritage and innovative food products developed to promote sustainable development.

The colourful event brought together students, lecturers and food innovators from various universities and departments across the country to showcase traditional and continental cuisines.

Speaking to the media, President of the Ghana Association of Scientists and Technologists, Professor Emmanuel Ohene Afoakwa, explained that the initiative seeks to promote both local and continental dishes while encouraging innovation in food production.

According to him, traditional foods go beyond being mere cultural symbols.
“They are nutritious, climate-smart and sustainable. They help protect biodiversity, strengthen rural livelihoods and offer practical solutions to food insecurity and malnutrition,” he emphasized.

Professor Afoakwa further noted that such initiatives empower students with entrepreneurial skills, enabling them to create their own jobs after school instead of depending solely on formal employment.

The annual festival continues to position KNUST as a hub for research-driven innovation and practical solutions to national and continental food security challenges.
